Breakfast Casserole

Breakfast can sometimes feel redundant and I am always looking for new recipes to make ahead of time that are easy to reheat throughout the week. I found this Breakfast Casserole in Savory Sweet Life Cookbook and I am happy to say we have a new favorite that will be on the bi-weekly rotation. This recipe is super easy to prepare, also there are a variety of ways to make it your own.

Anything with Tator Tots has my attention so that makes this casserole my new favorite breakfast. The number of servings will vary depending on how large you cut each piece. I was able to get 15 servings from the 9×15 pan. That’s a week of breakfast for the both of us and all we need to do is heat it up for a minute in the microwave and Whallah!

If this dish has too many servings, you can always freeze half and defrost for a later date or simply cut the recipe in half and prepare in a smaller dish. If you need a meal to serve over the holidays with family and friends, I promise you will win everyone over.
