Breakfast Casserole

Breakfast can sometimes feel redundant and I am always looking for new recipes to make ahead of time that are easy to reheat throughout the week. I found this Breakfast Casserole in Savory Sweet Life Cookbook and I am happy to say we have a new favorite that will be on the bi-weekly rotation. This recipe is super easy to prepare, also there are a variety of ways to make it your own.

Anything with Tator Tots has my attention so that makes this casserole my new favorite breakfast. The number of servings will vary depending on how large you cut each piece. I was able to get 15 servings from the 9×15 pan. Thatโ€™s a week of breakfast for the both of us and all we need to do is heat it up for a minute in the microwave and Whallah!

If this dish has too many servings, you can always freeze half and defrost for a later date or simply cut the recipe in half and prepare in a smaller dish. If you need a meal to serve over the holidays with family and friends, I promise you will win everyone over.

Breakfast Casserole Recipe

Ingredients:

1 pound of mild sausage
1/2 yellow onion, chopped
1 cup diced bell peppers (yellow, red or orange)
2 cups frozen tater tots
6 slices white bread, cubed in large pieces
3 cups of grated extra-sharp Cheddar cheese
8 eggs
1 cup heavy cream
1-1/2 cups of milk
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1-2 tomatoes, thinly sliced
Optional: chopped parsley

Instructions:

1. Preheat oven to 350 degrees and spray a 9ร—13 casserole dish with non-stick cooking spray.
2. In a medium skillet, brown sausage, onion, and bell peppers until sausage is no longer pink.
3. Place the tater tots in the casserole dish followed by a layer of the bread cubes.
4. Add the sausage, onion, bell peppers over the bread and sprinkle an even layer of cheese.
5. In a medium bowl, whisk the eggs, cream, milk, mustard, salt and pepper. Pour the egg mixture over the casserole.
6. Layer the top of the casserole with sliced tomatoes.
7. Bake casserole for 1 hour.
8. Garnish with chopped parsley.

If making the night before, cover with plastic wrap and refrigerate overnight.
