Cheese, Bacon and Rotel Phyllo Cups

Super Bowl is around the corner and the food (in my opinion) is far more important the game HA! So when I found Cheese, Bacon and Rotel Phyllo Cups, my heart skipped a beat after the first bite. These little bite size snacks are ridiculously delish.  They are best served warm.

What’s in the Cups?

  • 3 boxes of frozen Mini Phyllo cups (15 per package)
  • 1 cup Hellmann’s mayonnaise
  • 1 (10 oz) can drained Rotel
  • ยฝ cup chopped, cooked bacon
  • 1ยฝ cups shredded Colby and Monterey Jack cheese

Small enough for a Toaster Oven

If you are serving a smaller crowd and have access to a toaster oven you can easily cook 10-15 at a time vs the hassle of using your oven. It worked perfectly to cook a little as the party went on. This allows warm cups served throughout the event.

Ingredients

  • 3 (1.9 ounce) boxes of frozen Mini Phyllo (Fillo) Shells (15 per box)
  • 1 cup Hellmann's mayonnaise
  • 1 (10 ounce) can Rotel (diced tomatoes with green chilies), drained
  • ยฝ cup chopped, cooked bacon
  • 1ยฝ cups shredded Colby and Monterey Jack cheese

Instructions

  1. Preheat oven to 350ยฐ.
  2. Remove phyllo shells carefully from their boxes. No need to thaw. Place shells onto a large baking sheet.
  3. In a large bowl, mix together the mayonnaise, Rotel tomatoes and bacon pieces.
  4. Once combined, stir in the cheese. Scoop 2 Tablespoons of filling into each phyllo shell.
  5. Bake for 15- 20 minutes or until golden and cheese is melted.
  6. Serve warm.
