Is that Bacon in your Guacamole?

Guacamole is one my favorite food groups. I am always looking for new ways to enhance the flavor and make it taste just right. I recently was inspired by the Mi Dia From Scratch restaurant for my latest addition. While making this table side dish they added freshly cooked bacon, yes you heard me right, bacon! My life will never be the same.

I have also adopted replacing the Lime Juice with Orange Juice and that too can be a huge hit.

Avocado toast is all the rage right now and this guacamole will taste incredible on your favorite bread with scrambled eggs. If there is anything that is my weakness it’s chips, salsa and guacamole. Enjoy it with your favorite chips, mine happen to be Julios. It’s also a nice addition to homemade tacos or enchiladas. Be sure to check out my recipe.

Tips for good Guacamole:

While visiting Cabo in Mexico we had an afternoon activity to learn how to make the perfect guacamole, here is what I learned. When chopping up cilantro don’t discount the stems. Include the stems when chopping.

Also there are lots of recipes that include chopped tomatoes, I leave them out because they tend to make the guacamole watered down.

Guacamole with Bacon

Ingredients

  • 4 ripe avocados
  • 4-5 pieces of chopped bacon
  • 1 jalapeรฑo stemmed, seeded and finely chopped
  • 3 minced garlic
  • 1 teaspoon cumin
  • 3-4 tablespoons of chopped cilantro
  • Salt to taste
  • 1 tablespoon freshly squeezed lime or orange juice
  • 1/2 medium white or red onion chopped

Instructions

  1. Cut the avocados into quarters. Remove the seeds, peel, and place in mixing bowl.
  2. Mash the avocados with a fork until chunky.
  3. Add the remaining ingredients and serve immediately.
