Breakfast is a meal I try not to skip, so when I find a recipe that ups my breakfast routine everyone wins. Overnight oats have become quite the sensation and very popular in the last couple of years. If you Google “Overnight Oat” recipes you will likely be overwhelmed. I ran across this blueberry recipe and I couldn’t believe how easy it was to make. If I am going to go through the effort of making it I decided it’s better to knock out a couple servings vs making one.
This recipe is also very kid friendly and something they could make ahead fo time to help prepare breakfast. I have several versions that I plan to try and share on the blog however this one is memorable and testes amazing. What I love is you can eat it cold or heat it in the microwave and enjoy it warm. Either way you will win.
Overnight Oats Recipe – 4 Servings
Ingredients:
- 2 cups rolled oats regular
- 2 cups milk of choice
- 4 tablespoons cashew butter (almond butter will work as well)
- 8 teaspoons honey
- 2 teaspoons cinnamon
- 2 teaspoons vanilla extract
- 4 tablespoons ground flax (optional)
- Dash of sea salt
- 1 cup fresh blueberries
Instructions:
- Combine all ingredients except the blueberries in a small jar that can be sealed.
- Stir well to combine.
- Gently stir in blueberries.
- Cover and refrigerate overnight or for at least 4 hours.
- Serve chilled or warm by microwaving for roughly 1 minute.
- If your oats are a bit too dry in the morning, add a little milk.
