Union Square Cafe’s Bar Nuts

Over 10 years ago I attended a holiday party where these bar nuts were placed on several tables. I decided to give them a try and was taken by surprise by the unique flavor. It was unlike anything I had ever tasted before and I immediately asked the host for the recipe. Would you believe that I haven’t made this recipe until today. I am in the process of creating holiday gift packages and I thought these would be something different and slightly healthier than traditional candied pecans.

It took minutes to prepare as this recipe only has a handful of ingredients. I asked John to give them a try and he firmly nodded that these were in fact delicious and continued to devour a handful of them.

This recipe is simple, unique and flavorful and a perfect compliment to any dinner or cocktail party, they also make great gifts during the holidays. These bar nuts are sure to impress just about everyone and I can bet there won’t be any leftovers.

The photos below display a double batch, I used walnuts, whole pecans and almonds. If you are looking for more spice, add a  little more cayenne pepper. Also a little extra brown sugar and melted butter never hurt anyone ๐Ÿ˜‰

Bar Nuts Recipe:

Ingredients:

2 1/4 cups (18-ounces) assorted unsalted nuts, including peeled peanuts, cashews, Brazil nuts, hazelnuts, walnuts, pecans and whole unpeeled almonds
2 tablespoons coarsely chopped fresh rosemary leaves
1/2 teaspoon cayenne pepper
2 teaspoons dark brown sugar
2 teaspoons Maldon or other sea salt
1 tablespoon unsalted butter, melted

Instructions:

  1. Preheat the oven to 350 degrees F.
  2. Toss the nuts in a large bowl to combine and spread them out on a baking sheet. Toast in the oven until light golden brown, about 10-15 minutes.
  3. In a large bowl, combine the rosemary, cayenne, sugar, salt and melted butter.
  4. Thoroughly toss the toasted nuts in the spiced butter and serve warm.
