World’s Best Tomato Sauce

Italian food is another favorite of mine, so when I discovered “The World’s Best Tomato Sauce” recipe I was on cloud nine. Not only does this taste homemade, the ingredients are so simple and it’s very easy. The recipe comes from a church cookbook, so you know it has to be good. I recently made an entire batch and it freezes nicely. This sauce pairs nicely with any pasta and while it doesn’t require meat, cooked Italian sausage is a great addition to this dish.

The Secret to Great Sauce

The secret to a good tomatoes sauce is the canned Tomatoes. San Marzano tomatoes are the most famous plum tomatoes from Italy. They are grown in the rich volcanic soil at the base of Mount Vesuvius, giving them a sweet flavor and low acidity. They are well-liked for their firm pulp, deep red color, easy to remove skin and low seed count. Because of the quality many cooks consider San Marzano tomatoes to be among the best in the world to use in a sauce.

Tomato Sauce Recipe

6-8 minced garlic cloves
1/8 cup olive oil
½ cup chopped shallots
2 (28 oz) cans peeled plum tomatoes with basil
12 large basil leaves or 1 tablespoon dried
¼ cup fresh chopped Italian parsley or 2 teaspoons dried
½ teaspoon salt
½ teaspoon pepper
1-pound Italian cooked sausage (optional)

Instructions

1. In a large skillet cook garlic briefly in oil over medium to low heat. Avoid it turning brown or it will turn bitter
2. Cook onion 3-5 minutes in oil then add garlic and cook an additional minute
3. Add juice from canned tomatoes to stop garlic from cooking
4. Chop tomatoes and add to the skillet
5. Add basil, parsley and ¼ teaspoon salt and pepper
6. Bring to a boil and stir thoroughly only once then reduce heat to a low simmer
7. If using cooked Italian sausage add to the sauce
8. Sauce is ready in 30 minutes and can cook up to an hour if you want a thicker sauce
9. Taste and add any additional salt and pepper if desired.
