Sometimes beans and rice is all you need. I have been having fun with my Instant Pot and it has the Rice Cooker feature so I thought I’d take this traditional recipe I found in Savory Sweet Life Cookbook and give it a try. The result was perfect. This dish would be great as a stand alone meal or could accompany a variety of entrée’s.
I honestly don’t ever remember a time having beans and rice growing up. It wasn’t something on the dinner menu, however I enjoy discovering meals that are easy to prepare with few ingredients.
The best ways to serve black beans and rice:
- Try them with Beef Enchiladas
- Lunch or dinner – Top with your salsa
- Side dish with your favorite Tacos
Instant Pot Beans and Rice Recipe
Ingredients:
4 tablespoons olive oil
1 medium yellow onion chopped
4 garlic cloves, minced
½ teaspoon kosher salt
1 ½ tablespoons ground cumin
½ tablespoon ground coriander
2 teaspoons dried oregano
1 teaspoon chili powder
1 ½ cups uncooked brown rice
Two 14-oz cans black beans, drained and rinsed
2 chicken flavored bouillon cubes
Optional: sautéed green chili, cilantro, lime juice
Instructions:
1. Add 2 tablespoons olive oil to the Instant Pot, turn to saute’ feature.
2. Add onion, garlic and salt and cook for 5 minutes.
3. Stir in cumin, coriander, oregano and chili powder.
4. Add 2 tablespoons olive oil and the rice and cook for 3 minutes.
5. Add all remaining ingredients and cook in Rice Cooker mode.
6. Garnish with cilantro and lime juice
