Slow Cooker Sweet Potato Chipotle Chili

As the weather gets warm, I hesitate to turn on my oven and prefer to cook more slow cooker meals. I found this Sweet Potato Chipotle Chili recipe last year on Pinterest and I was impressed with how easy it was to make and the flavor was unlike any chili I have ever had. I think the Adobo Chipotle Peppers get a lot of the credit.

This has become a staple slow cooker recipe in our house and it also will freeze well. It turns out this is Paleo and Whole 30 friendly so that is always a plus.

Sweet Potato Chipotle Chili Recipe

Ingredients

2 large peeled and chopped sweet potatoes
1 lb ground lean pork, beef, chicken, or turkey
1 cup chopped yellow onion
2.5 cups broth (For a richer flavor, substitute the broth with tomato juice or tomato puree)
14-oz diced canned tomatoes drained
2.5 cups finely chopped or riced cauliflower
1 tsp minced garlic
2 chopped chipotles with the adobo sauce
1 tsp cumin
/2 tsp paprika
1/4 tsp chili powder
1/4 tsp black pepper
Salt to taste
Cilantro and optional sliced jalapeรฑo to garnish

Instructions

1. Chop and peel potatoes.
2. Brown meat in a skillet, drain grease. Place meat on plate. In the same skillet, sautรฉ onion until fragrant, about 2 minutes. Then place browned meat and onion in the slow cooker.
3. Add broth, canned tomatoes, sweet potato, cauliflower, and mix all together.
4. Add seasonings and chipotle peppers with sauce.
5. Stir and cook on high for 2 hrs.
6. Add more paprika and or black pepper/sea salt when finished cooking if desired.
7. Garnish with fresh cilantro and optional jalapeรฑo.

Instant Pot Recipe

Brown meat on sautรฉ setting. Drain the grease, remove meat from the instant pot. Place onion in instant pot and cook on sautรฉ setting for 2 minutes. Add the meat, sweet potato, cauliflower, broth, spices, and chipotle peppers. Mix and cover. Pressure cook for 18 minutes, slow release. Salt and Pepper to taste.
